Durante esse processo, n\u00f3s nos livramos tamb\u00e9m de sabores \u00e1cidos e vol\u00e1teis. Isso os faz evaporar do chocolate. Al\u00e9m disso, esse processo cria um chocolate com sabor homog\u00eaneo. Para quebrar alguns mitos: processos de conchagem mais longos n\u00e3o oferecem um melhor chocolate. Deve levar apenas o tempo necess\u00e1rio para desenvolver o sabor perfeitamente redondo e equilibrado preservando as notas refrescantes e frutadas.<\/p>\n<h3>\nTESTE DE FLUIDEZ<\/h3>\n<p>No final do processo de conchagem, testaremos a fluidez e \u2013 se necess\u00e1rio \u2013 ajustando-a adicionando mais manteiga de cacau.
